Process
First step to make ice creams is to make the liquid base which require fresh milk. You can get milk directly from the farmers or from the dairy with proper quality checking. Then you have to heat the milk for 40 degree Celsius so as to separate the cream from the milk.
When the cream is separated from the milk, next the milk undergoes the process of standardisation and balance the fat content in the milk. Then the sugar is added in the require quantity. The exact amount is not disclosed by any company as they have the proper recipe to make their product standout in the market.
If you want to standout in the market then you have to make the process of making ice cream different from common methods like adding different flavours and materials. When the sugar is added in the milk then it is transferred to the pasteurizer tank where stabilisers and emulsifier is mixed in appropriate quantity. The process of pasteurization takes place and the milk mixture is warm till 80 degree Celsius for 30 minutes. This process reduce the harmful microorganisms present in the milk.
Then the milk is passed to the homogenizer using pumps where the fats globules present in the milk undergo the molecular breakdown under high pressure forced flow. Now your liquid base is ready. To make soft ice cream, the milk base is send to ageing tank to age where the temperature is set to 4 to 5 degree Celsius. The mixture is allow to cool down for approx. 4 to 8 hours. This process cools down and crystallize the fats in the milk.
After the ageing the ice cream mixture is transferred to the flavouring tank where flavours like Vanilla, Chocolate, etc are added. Then the mixture is passed to the continuous freezer where the ice cream gets ready. When the ice cream is ready it is send to the packaging area for packaging in cups, cones and bricks manually or automatically.
Investment and Profitability
To start ice cream manufacturing business, the cost of machineries and equipment will be approx. 12 Lakhs rupees. If you want to start the business on the large scale, then the cost will be approx. 50 Lakhs rupees. The investment can vary according to the project size and capacity like semi automatic or fully automatic plant.
If you have the capacity of 500 Litres of ice cream product per day and the rate of ice cream in the market is 100 rupees per litre then you will have the sales of 45000 to 50000 rupees per day. If you remove the cost of the raw materials and other expenses, you can easily earn 10000 to 12000 per day.
Power Requirement
To start the ice cream making business, the power requirement depends upon the capacity and machineries type like semi automatic or fully automatic, generally you will require approx. 20 to 25 kW of electrical load.
